The Chairman: This closes our business for the forenoon and we will now stand adjourned until 2 o’clock. WEDNESDAY AFTERNOON SESSION. Meeting called to order at 2 o’clock by President Lillie. The Chairman: The first subject on our program this afternoon is The Technique of Cheese Making. We all know that when we want to get advanced ideas in dairying, and especially in cheese making, that there is no place in the world we can go to for those ideas better than Canada. Canada has, through her government, done much for the dairy interests in that country, especially along the line of expert cheese making. We had such good luck in going over to Canada a year ago, we were furnished with such a valuable talk on cheese making, that the dairy and food commissioner deemed it advisable to get that address printed and distributed to every cheesemaker in the state of Michigan; so again this year we thought there could be no better place to go after a man to give the Michigan cheesemakers instructions than to the same source.
